Product Description
Stachyose is a sugar formed by combining two α-galactoses with 1,6-glycosidic bonds on the glucosyl side of sucrose. Its molecular formula is C24H42O21. The sweetness is 22% of sucrose, no peculiar smell. Soluble in water, insoluble in organic solvents such as ether and ethanol.
Stachyose has good thermal stability and will not decompose at a high temperature of 100°C, but the thermal stability is reduced under acidic conditions, so it can be used for foods that require autoclaving. The storage stability in an acidic environment is related to temperature, and it is quite stable when the temperature is lower than 20°C. The moisture retention and hygroscopicity are lower than sucrose but higher than high fructose syrup, and the osmotic pressure is close to that of sucrose. Above 80°C, stachyose has coloring properties and can be added to baked foods to make the food appear attractively browned.
